As a kid growing up in Catania, Sicily, my grandmother would make this salad at least three to four times a week. She had to make it that often because it usually didn’t last more than one day.
It was the best salad of my childhood, and it still is the best salad of my adult life.
Make it your way. Add onions if you like or fresh garlic. You can use Roma or vine-rippened tomatoes for a different taste. Cherry or grape tomatoes are good all year round, so oI uses them a great deal in the winter.
This salad is good any day, in any weather condition and for lunch, an afternoon snack or with dinner fancy or not. Just enjoy!
