A Re-Imagined Cucumber Salad Minus the Cucumbers!
Yup, we left them out for a good reason and a potentially good substitute.

I'm sorry, but there's no video today. Instead, here's a take on a salad I wrote about back in 2023 (here). It’s been a staple in my life since as far back as I can remember.
It’s a simple dish to add to any meal or, for that matter, can be an appetizing lunch with a bit of garlic bread or just plain Italian bread to dunk in the juice.
This time, though, I was without cucumbers at the ready since the veggies at the local market, especially the cokes, looked terrible. When I say awful, they mainly were squishy and soft to the touch, with many having thumbprints where others were testing them.
So, we decided to adjust this traditional tomato and cucumber salad.
We added chopped celery and roasted peppers. You could also add onions, but that’s up to you.
What You Need:
Balsamic or Red Wine Vinegar: Whichever tempts your taste buds san as much as you feel is correct
Extra Virgin Olive Oil: Same with the olive oil. The amount is totally up to your taste buds and the brand is your decision.
Main Stuff:
Celery
Tomatoes: Whichever kind you have on hand
Pepper: Sweet or Hot, your choice
Pick a Veggie You Love and add it
Spices:
Salt: to taste
Pepper: same
Basil: same
Oregano: same
Fresh Garlic: 1-2 clovis diced or chopped
Garlic Powder: when garlic isn’t around: Amount: same as above
Onions (a few slices or diced up, your preference or use Onion Powder: again up to your tasted.
Etc.
A little Italian parsley is a nice touch, but not needed
Anything else you can think of will enhance the tasted.
You could also use this to stop a dish of tuna or chicken over lettuce.
Use your imagination and taste buds to make it your own.
