A Little History on Italian Chicken Soup and Health
I’m cinluding my recipe and cooking instructions for my grandmothers version

My Sicilian Grandmother’s Recipes that I still follow. Almost!
1-2 Whole Chicken(s) depending on the amount of people
Extra Virgin Olive Oil about 2-3 table spoons
Garlic 2-4 cloves. More if you’re not feeling well and need a boost of health
Basil - enough to bring aroma to the kitchen
Oregano - a pinch or so
Salt and Pepper (or crushed red pepper) to taste
I add meatballs to my soup. The meatballs are small like in Italian wedding soup. I make them up with beed and sausage. I make tham the same way I make meatballs. That recipe is coming soon.
Tomatoes- I try to use Cento Brand ( use your favorite) whole tomaotes then crush them by hand so there are chunks in the soup.
Celery- I use 4-5 for 1 chicken (you can use as many as you like)
Carrots- I use around 5-6 for 1 chicken (you can use as many as you like)
Greens- Spinach, kale, escarole, zucchini, or whatever is your choice
Pasta Any kind you enjoy, I prefer Ditalini
You could add some cannellini beans if you like. I do every so often if I want more hardiness
I use onion powder, but my Grandmother used 1 white onion chopped up
Instructions:
Sautee the garlic in the Olive Oil with salt, basil, and oregano (if using red pepper, add the flakes now)
Then let cool for a bit. Add enough water to cover the chicken(s) and bring to a boil. Do not strain that water as many do, that’s the best par of this soup. By boiling, you’ve killed any and all bacteria. Plus the taste is in that boiled concoction on the stovetop.
Boil the chicken long enough so that it’s falling apart. Remove the chicken and let cool before taking the meat off the bone.
Add the meat removed from the bone and add the rest of the ingredients except for the pasta. Cook until everything is the way you like it. I cook my veggies to they have a little bite to them.
Before serving, you can do one of two things. You can add the pasta to the pot or cook it separate, and add the soup to the pasta in each bowl you’re serving. I go with my Grandmother’s routine. I add the pasta to the pot because the next day, if there are leftovers the pasta has a much better taste after soaking through the night. Of course, the pasta may swell up, but it still taste great.
